Bean & Egg Explained
Bean & Egg is the taco that South Texas families have been making in their own kitchens for generations. At Bill Miller, we make the same thing at scale: house-cooked refried beans, scrambled eggs, flour tortilla, fold. Two ingredients in balance, nothing extra. The beans lend creaminess, the eggs add protein, and the tortilla carries the whole thing. Adding cheese is optional but not controversial.
How Regulars Eat It
Two Bean & Egg tacos plus a coffee is a $6.80 breakfast that'll get a full-grown adult through a half-day of work. Add salsa or hot sauce for a wake-up. If you want meat, swap one for a Bacon & Bean ($1.95) or Brisket ($2.85).
