Why This Taco Works

The brisket taco is a case study in restraint. The brisket carries the flavor - smoky, beefy, slightly salty from the dry rub, with the tender chew of muscle that's been cooked for half a day. The tortilla keeps out of the way: warm, soft, flexible enough to hold without falling apart. We don't add cheese by default because the brisket deserves the spotlight, though fifty cents will get you some melted cheddar if that's your move.

Variations

For a bigger bite, try the Brisket & Egg ($3.95) - a scramble on top of the brisket. Brisket & Bean ($3.60) swaps in refried beans for earthier flavor. Brisket & Potato ($3.60) adds golden hash-brown potato for a more filling handheld.

What To Pair It With

A small iced tea ($1.25) or coffee. If you're building a lunch, grab the Taco Box instead - it's the most efficient way to try multiple fillings.
