The Biscuit Does The Work

The key to the Cowboy Breakfast is the biscuit. Our bakery team pulls these out of the oven right before the breakfast rush - tall, layered, with a crunch on the bottom and a pillowy inside that soaks up gravy like a professional sponge. The gravy itself is classic Southern country gravy: pork-drippings roux, plenty of cracked black pepper, whole milk, a small amount of salt. Nothing fancy. It's not supposed to be.

The Bacon Is Non-Negotiable

Three slices of thick-cut bacon come with every Cowboy Breakfast. We fry them on a flat-top griddle to a crisp-but-not-shattering texture, then crumble some on top of the gravy if you want (you should). If you're more of a sausage person, go with the Bill Miller Breakfast instead.

Pair With Coffee
