That makes it a great pick for anyone watching carbs, anyone who plans to eat behind the wheel (no rolling required), or anyone who just doesn't feel like picking tortilla crumbs out of their shirt for the rest of the morning.
The Layering
We build these bottom-up: hash browns on the base, then refried beans, then a heap of scrambled eggs, with your sausage or bacon crumbled generously on top. The heat from the eggs keeps everything else warm, and every forkful has a little of each component - which is really the whole point.
How To Jazz It Up
Ask for cheese melted on top (small upcharge, worth it). A drizzle of hot sauce or house salsa transforms it. And if you really want to push it into "lunch already," order a brisket taco on the side - the combination of smoked brisket and hash browns is a two-dollar upgrade that punches above its weight.
